Pimiento Cheese

Ingredients

One 4-ounce jar chopped pimientos, drained

1 cup mayonnaise

1 garlic clove, minced

1 tablespoon lemon juice

1 teaspoon dry mustard

1/2 teaspoon Worcestershire sauce

1/4 teaspoon ground red pepper

2 cups grated Cheddar (8 ounces)

2 cups grated Colby (8 ounces)

Directions

Combine pimientos, mayonnaise, garlic, lemon juice, dry mustard, Worcestershire sauce, and red pepper in a medium bowl. Beat with a wooden spoon or an electric mixer at medium speed until blended.

Add grated cheese and beat until the consistency of cottage cheese.
